Why this works on GLP-1

Cold, hydrating cucumber and soft salmon are gentle on a nauseous stomach, there's no cooking smell to trigger food aversion, and the rolls keep 24 hours refrigerated for grab-and-go meal prep.
Ingredients
- 1 large English cucumber
- 4 oz cold-smoked salmon (lox)
- 3 tbsp whipped cream cheese
- 1 tbsp plain Greek yogurt (2%)
- 1 tsp fresh lemon juice
- 1 tbsp fresh dill, chopped
- 1/4 tsp black pepper
- 1 tsp capers, drained (optional)
Steps
- Trim the cucumber ends, then use a vegetable peeler or mandoline to shave the cucumber lengthwise into 8 long, thin ribbons.
- Lay the ribbons flat on a paper towel and blot gently to remove excess moisture so the filling sticks.
- In a small bowl, stir together the whipped cream cheese, Greek yogurt, lemon juice, dill, and black pepper until smooth and spreadable.
- Spread a thin layer of the cream cheese mixture along each cucumber ribbon, stopping about half an inch from one end.
- Lay a small strip of smoked salmon over the cream cheese, then top with a few capers if using.
- Starting from the filled end, roll each ribbon up snugly into a pinwheel and place seam-side down on a plate.
- Chill for 5 minutes if you want them firmer, then serve cold with extra lemon and dill on top.
